Large diameter sausages and bologna should be cut at a right angle to show off the full range of its texture. For customers displaying in a deli case, you can trim off a thin slice of bologna once a day, this removes the oxidized parts of the bologna and shows off the fresh portions. The removed slices can then be used for a salad- all you need to do is freeze them until you have the desired amount. Small chubs should be displayed whole.
