The Cooked Salami is placed in a smokehouse and
heated until the internal sausage temperature reaches the needed temperature.
It is then moved to a cold water bath, rinsed briefly with hot water to remove
the grease, and then hung at room temperature for an hour before it is placed
in the refrigerator.
